Strawberry Kale Salad with Raspberry Infused Apple Cider Vinaigrette

Fresh strawberries, kale, pecans and creamy goat cheese star in this summer soiree on a plate. This simply delicious and healthy salad is tossed in a vinaigrette that is made with a raspberry infused apple cider vinegar from a local Cider Mill.


4 cups fresh Kale
2 cups fresh green leaf lettuce
1 pint strawberries, hulled and sliced
3 green onions, sliced thinly
½ English seedless cucumber, diced
4 ounces goat cheese, crumbled
¼ cup pecans, toasted and chopped


¼ cup Meleg’s raspberry infused apple cider vinegar
½ cup extra virgin olive oil
3-4 tbsp. honey
½ tsp. sea salt
1 clove garlic, minced
Mint, chopped finely
Basil, chopped finely

In a large bowl, combine all of the salad ingredients.

In a small bowl, whisk together the dressing ingredients, then lightly dress the salad; mix well.
