Balsamic and Fig Lettuce Wraps

These lettuce wraps are the perfect combination of crunchy and soft, fresh and sweet. These wraps were inspired by the sweetness of our seasonal fruits.


4 leaves of Romaine lettuce
2 figs, quartered
¼ cup blueberries
2 beets, roasted and chopped
½ small onion, chopped
¼ cashews, chopped
¼ balsamic vinegar
2 tablespoons honey
2 tablespoons olive oil
½ teaspoon soy sauce

Plate romaine lettuce and distribute next five ingredients among the four leaves.
 In a small bowl, mix balsamic vinegar, honey, olive oil and soy sauce.  Drizzle over wraps.  Eat immediately.
