Roasted Spaghetti Squash and Chicken


Ingredients

1 Spaghetti Squash, halved
4 Sweet Potatoes, halved
4 Beets, sliced
1 Sweet Red Bell Pepper, sliced thinly
4 Garlic cloves, sliced thinly
4 Chicken Legs
Sprigs of fresh rosemary
Salt
Olive Oil
Freshly ground pepper

Preheat oven to 475F.  Add squash, sweet potatoes, beets, garlic and chicken to a greased baking sheet.  Top with rosemary, salt and olive oil.  Roast for 40 minutes, or until meat easily separates from the bone.  Remove from oven.

Take squash and sweet potatoes and separate the flesh from skin. Add to a bowl and mix well.  Mix in beets and garlic.  Add the mixture to a plate and place a chicken leg on top.  Sprinkle with slices of bell pepper.  Enjoy immediately.
