Butternut Squash Manicotti

Try this seasonal spin on a traditional pasta recipe: delicious manicotti pasta stuffed with sweet butternut squash and topped with a sharp blue cheese and fresh basil.


1 butternut squash, roasted
1 sweet potato, roasted
1 pint mushrooms, chopped and sautéed
¼ cup blue cheese
¼ cup pecans, roasted and chopped
5-6 fresh basil leaves, chopped
1 package manicotti (about 14)

In a bowl, combine roasted butternut squash, sweet potato and sautéed mushrooms; mix well.  Add mixture to manicotti shells.

Line shells in a baking dish.  Top with blue cheese, pecans and basil.  Bake at 350F for 10-15 minutes.  Enjoy immediately!
