Potato Salad

Unlike your traditional potato salad, this recipe prepared by Elite Steak & Seafood uses both white potatoes and sweet potatoes.  It also favours a vinegar dressing over the heavy mayo and has lots of healthy greens added to the mix.


Ingredients

1 large sweet potato, peeled
2 large white potatoes, peeled
1 bunching onion, chopped
½ red bell pepper, chopped
1 kale leaf, chopped
1 swish chard leaf, chopped
2 tablespoons freshly chopped parsley,
3 fresh mint leaves, chopped
¼ cup feta cheese, crumbled
White vinegar
Salt
Freshly ground pepper

Boil potatoes until fork tender.

In a bowl, smash potatoes leaving some chunks.  Add bunching onion and red bell pepper.  Dress with white vinegar, salt and pepper. 

Mix in kale, swiss chard, parsley, mint and feta cheese.  Further season to taste.


Note:  If you’re looking to add protein to the dish, mix in cooked chicken.
