Roasted Tomato and Pepper Tartare

This recipe by Elite Steak and Seafood strikes more than one point as it’s full of vegetables, it’s light, it’s healthy and it’s versatile.  Grab the veggies from your bag and get started!


1 tomato on the vine, chopped and roasted
1 mini cucumber, chopped
1 Bosc pear, sliced thinly
1 radish, sliced thinly
½ bell pepper, chopped and roasted
1 handful of Swiss chard, steamed
1 green onion, chopped

Season all the vegetables with salt and pepper.

To plate, start layering with steamed Swiss chard, then roasted tomatoes, then slices of pear, followed by roasted bell pepper.  Top with chopped cucumber and green onions.  Use radish for decoration.
