Stuffed Peppers

Don't let the presentation fool you.  This Stuffed Pepper recipe by Elite Steak & Seafood not only looks beautiful, but it's healthy, delicious and EASY.



Ingredients:

2 bell peppers, seeded and tops removed
1 leek, diced
1 coloured carrots, diced
2 Brussels sprouts, diced
1 tomato, diced
1 beet, diced
1 sweet potato, diced
2 red cabbage leaves
olive oil
salt

Preheat oven to 350F.

In a bowl, mix all of the diced vegetables. Drizzle with olive oil and season with salt.  Stuff bell peppers with diced vegetables.

Place bell peppers in a deep baking dish and bake for 45 minutes, or until tender.

Plate the stuffed bell pepper onto a red cabbage leaf and enjoy!
